The best Beets ever!

I don’t often share recipes.

I don’t even like to cook.

But, when my friend Darla from bay side to mountain side

asked what we do with beets, I had to share :)

Pickled Red Beet Eggs

I love beets, but this is the best, yummiest way to eat them!

 

First you need to hard boil some eggs.

I always do at least a dozen, we can’t get enough.

As a side note, SAVE the water that you boil the eggs in!

After it cools, feed it to your plants, they love the calcium.

Anyway, back to the beets.

Peel and slice the beets, put them in a pot with just enough water to cover them.

Use good water, not city water.

Simmer them for about 20 minutes.

Then turn off the heat and add 1 cup of Organic Sugar

and 2 cups vinegar. ( I use apple cider or red wine)

And about 8 whole cloves.

Stir until the sugar is melted.

Put the PEELED eggs in a jar and add the beets and the juice.

When the are cool,

put them in the fridge and try to forget about them

for at least 24 hours.

The longer the sit, the better they get!

Try this recipe, even if you don’t think you like beets.

You can thank me later.

  5. I had to laugh at this one Lisa. I'm headed for an old fashioned picnic with my "Supper Club" this weekend and one of the members said she was bringing these very eggs. I told her I thought they sounded awful and that I have never had them. She said I would be surprised when I taste them. I just went through your recipe and saw the beautiful tray of them and yes, I know I'll be trying hers. I love beets too. I sent her your recipe and asked her if it is the same. I'm looking forward to them now, thanks to you~

  7. oh man! the eggs look so cool! it reminds me of what we do on the full moon of a new born. we make red eggs and distribute it to share the joy and spread luck :) tho we don't make it with beet or remove the shell :)

  9. I LOVE pickled eggs and beets! Anything with sugar and vinegar, it's my favorite taste combo. Never tried making them myself. Nobody here likes pickled eggs but me ~ I usually only get them at a salad bar lol. But I think I will try making these all for myself!

    Your photos are beautiful! The eggs are such a lovely red-purple color.

  10. You know, I'm not a beet fan, either, but they are always so pretty! These look great. I like them julienned in a salad. And I used to juice them with garlic and spinich and it was KILLER juice! I miss that.

  13. I am SO lol-ing right now! Pickled eggs were my favorite craving when I was pregnant- I can to this day, still gross my hubby out by mentioning this! YUMmm, I wonder if I still like them?
